I have been meaning to post this recipe for soooo long. Since like the 2nd week of May. But every time I went to add the ingredients, I couldn’t remember everything on my own, and I had written down the amounts I used on a piece of paper I continuously forgot in my kitchen. Ugh. So, finally, I am posting this recipe.
This is probably one of my favorite dinners I’ve ever made. I’ve made it both in the oven and in the crockpot, so I’ve included instructions for both. I prefer making it in the oven, just because your potatoes and veggies will come out more roasted/crispier than in the crockpot, but it tastes just as good in the crockpot if you’re short on time (and because let’s be honest, it’s so much easier to throw everything in a pot and forget it for 8 hours). Some people like to sear their meat before cooking it in the crockpot – you can totally do that too, if you want, but I stopped searing my meat a while ago because A. I didn’t notice any difference in flavor or moisture and B. It was an extra step, and the whole point of using s crockpot is so you can be lazy.
In addition to being super delicious, hearty, and filling, this meal is totally Whole30 and Alchemy Challenge approved!! I originally used a little honey in the sauce, but removed it for the Alchemy Challenge, and I don’t miss it in this recipe at all. Feel free to experiment with other root veggies – I think parsnips and beets would taste awesome in this, too! Enjoy!
